Amazake

Amazake is a thick, sweet Japanese fermented food made from rice and koji. Its name literally means "sweet sake". The process of making amazake is similar to that of sake, but rather than allowing fermentation to continue until alcohol is formed, amazake is cooked before this happens. Amazake is often used as a natural sweetener for desserts, as it is healthier and lower in calories than refined sugar. It is also rich in B vitamins, has a beneficial effect on intestinal flora and is gluten- and lactose-free. In Japan, this ancestral drink is enjoyed hot in winter and cool in summer, for breakfast, tea or dessert.
