Ingredients

4 packs of fresh yakisoba noodles or 400 g of dandan mian noodles
- 120 g pork
- 200 g white or Chinese cabbage
- 4 to 8 tbsp. sunflower or peanut oil

4 tbsp. yakisoba or tonkatsu sauce

4 tbsp. red ginger (optional)

4 tbsp. aonori seaweed (optional)
Instructions
Slice the pork and coarsely chop the cabbage.
Heat the oil in a non-stick frying pan or wok and brown the meat over medium heat, stirring constantly.
Add the cabbage and cook until slightly translucent. Set aside.
Heat a little more oil over high heat and lightly brown the noodles, stirring constantly. Add 1 or 2 tablespoons of water at a time and untangle the noodles.
Add the pork and cabbage to the wok and stir.
Pour the yakisoba sauce into the mixture and stir again.
Place in a dish and garnish with red ginger and aonori.
Recipe notes
Despite its name, yakisoba is not cooked with soba (buckwheat noodles) but with wheat noodles, as it's a Japanese variant of the Chinese stir-fried dandan mian noodles.
You can replace the yakisoba or tonkatsu sauce with : 2 teaspoons soy sauce, 2 teaspoons sake, 1 teaspoon oyster sauce and 20 ml water.
Carrots, bean sprouts, celery, peppers, mushrooms, green beans... Any vegetable that can be cut into strips or sticks is suitable for this recipe, as are beef, chicken, squid and shrimps. Enough to vary your recipes!
WHAT IS YAKISOBA?
Yakisoba, literally "fried noodles", is an iconic noodle dish throughout Asia.
Yakisoba are very much a part of Japanese cuisine, a classic "street food" dish that can easily be found on the menu of a Japanese restaurant, particularly in the Osaka region of Japan, where they are a specialty.
Like Japanese stir-fried rice, yakisoba noodles can be prepared with leftovers from the previous day: recipes are varied, and there's no one-size-fits-all recipe. They are usually generously coated with a sweet and sour sauce (yakisoba sauce).
This is the most popular recipe, especially during the summer temple festivals.
WHAT IS YAKISOBA SAUCE?
Yakisoba sauce is a special sauce that is, of course, used in yakisoba dishes. Yakisoba sauce is generally a combination of sweet, salty and umami flavors.
It's a type of barbecue sauce very similar to tonkatsu sauce. Typical ingredients in yakisoba sauce include soy sauce, ketchup, mirin (a type of sweet rice wine), sugar and sometimes dashi broth to add an extra dimension of flavor.
