This miso is made using traditional methods in Kyoto by Akio Katayama, a master craftsman who has specialized in miso for over 60 years. The workshop has remained artisanal: miso is brewed by hand, without any mass-production equipment. It is said that 80% of the miso's taste comes from the kôji used. The kôji is also produced by hand, allowing it to develop over time. All these characteristics give this miso an incomparable taste and texture. Its gourd packaging makes it easy to store and use. Its creamy texture makes it easy to incorporate into preparations, particularly those based on vegetables, tofu or pork. Its high kôji content also makes it a choice ingredient in marinades, as it will make your dishes tender and juicy.
