This Junmai Daiginjo Dassai 45 is made from 45% polished Yamada-Nishiki rice, revealing a fruity aromatic profile and balanced sweetness. On the nose, it presents notes of white fruits such as pear and muscat grape, enhanced by a light acidity reminiscent of tropical fruit and citrus. On the palate, the attack is powerful, with flavors associated with rice fermentation and hints of chestnut. The soft, refreshing finish is invigorating. It can be chilled before a meal or served well chilled to fully appreciate its aromas and texture. It goes perfectly with a salad of fennel and green apple, mackerel and redcurrant, goat's cheese crottin. Profile: Nose: White fruit (grape, pear), green and exotic fruit (pineapple). Palate: Puffed rice, chestnut, watermelon. Finish: Fresh with slight acidity, stone fruit (apricot). Profile: Sweet and fruity.

Dassai is a premium sake produced by the Asahi Shuzo brewery in Yamaguchi prefecture. Recognized worldwide for its commitment to quality and innovation, the brewery specializes exclusively in the production of Junmai Daiginjo, the finest category of sake. The name "Dassai", which literally means "otter festival", refers to an ancient local custom: otters would arrange the fish they caught on the banks, creating a festive display. The name embodies the spirit of Vendor, combining respect for tradition with creativity. Asahi Shuzo is distinguished by its skilful combination of traditional techniques and modern technologies to produce sake of exceptional purity. The brewery places particular emphasis on intensive rice polishing, using mainly the Yamada Nishiki variety, reputed to be the best for sake.
