This sake has a smooth, silky texture and an elegant aroma. Its profile is both floral and milky, with a subtle sweetness that develops gradually before finishing on a clean, precise note. It is produced from Omachi rice, a renowned variety grown naturally, without the use of fertilizers or pesticides, according to the organic farming principles of the famous farmer Akira Kimura, known for his "apple miracles".
The sake is made from natural Omachi rice from the Okayama region, an ancient and precious variety that has not been artificially crossed. This sake is a pure example of the sake house's craftsmanship, where chai master Higashi Kikuchi has applied his expertise to create a balanced, refined drink. The rice is polished to 45% for delicate flavor and optimal fermentation quality.
